NEW BRAUNFELS HISTORY: THE DITTLINGER LEGACY LIVES ON

From a short visit to a lasting impact, one family shaped New Braunfels industry and community

Nicolaus Dittlinger may have only lived in New Braunfels for three months, but his story set the stage for a remarkable family legacy. Arriving in December 1865 with his wife and child, Dittlinger hoped the warmer Texas climate would restore his health. Sadly, he passed away in March 1866, leaving behind a small but symbolic marker and a wild rose planted by his wife.

Years later, his son Hippolyt journeyed from Germany to New Braunfels to check on his father’s holdings. Captivated by the town, he stayed, working his way into business and eventually founding Dittlinger Mills in 1886. Under Hippolyt’s leadership, the company expanded from a flour mill to poultry and stock feed production and even established a lime plant, creating a vibrant community known as Dittlinger Village. His contributions helped shape local industry, housing, and education, and he became known as the “father of industry in New Braunfels.”

The Dittlinger family’s generosity extended beyond business. They supported local institutions, including Holy Family Church and the Sophienburg Museum & Archives, and in 1967 contributed to the construction of the Dittlinger Memorial Library. Today, the rare Dittlinger Rose blooms as a living reminder of their enduring mark on the city.
